Everyday Adventures

I spent most of my adult life as a student, university professor, researcher, and public intellectual in the Philippines, Korea, and the United States (click above arrow to see my curriculum vitae). We retired (2021) in Seal Beach  where Buster, Pearl, and I made many friends, u ntil, out of the blue, we packed the car and drove north to Portland, Oregon (Fall/Winter 2024). What an adventure! Portland is a  welcoming, affirming, and friendly place to live, with lots of food trucks, farmers markets, interesting cafes, and cozy eateries. Ancient forests grow along side freeways and cover city outskirts. Tall trees, lush foliage, and moss covered soil is heavenly. Beautiful to behold. November through April is the rainy season. We moved there to see and experience the winter rains.   KABUTO Open Monday — Friday, 11:30am - 8:00pm 2365 Seal Beach Blvd. Suite 106 Seal Beach 90740 By Kathy Nadeau Looking for clean and fresh cuisine? Kabuto, Sushi and Grill located across the street from Leisure World, in strip mall between Hampton Inn Suites and Boeing. Chef Kazoo Ikeda from Tokyo, has always been in the restaurant business, before and now this one. Former customers follow him from Huntington Beach and Newport Beach. A bunch of lunch customers come from Boeing and, dinnertime, random places. A prep chef cuts up the vegetables that come in a big box. The Fish shipment from the US based Japanese Fish Company is sashimi grade. Salmon comes whole, as a big fish, explained the chef’s son, Halu,“dad preps the salmon, he knows how to prepare and marinate the salmon.” The salmon is marinated in miso, saki, and sugar. Broadway Long Beach, 90803 By Kathy Nadeau LW Contributor Looking for authentic, homestyle, Indian cuisine., Flamin Curry hits the spot.  A short drive from Leisure World down Westminster Blvd,, turn right on The Toledo, and take the first left onto Broadway, which brings you to Flamin Curry, a few doors past Redondo Ave, you’ll see their yellow-orange awning on the left. I have been looking for good Indian food and found the  place. A small take out restaurant, with casual inside dining and high quality, freshly made everyday fare. Naveen, the owner, is careful where he purchases fresh vegetables and doesn’t freeze or use frozen food. They grind their own spices, and don’t buy ready made spices. No food coloring, no gluten, no preservatives, no msg. They use fresh ginger, garlic, onions, tomatoes, and a lot of love. Sanjeev, the chef, used to be the chef for Carnival Cruise line.    Restaurant Review   Nah Binh, Open Tuesday-Saturday, 9AM-7PM, 14092 Magnolia St. #116, Westminster 92683. There is a reason why the LA Times (Jan. 9, 2023), once again, recognized Nah Binh as one of LA’s 101 best restaurants.  Its been around for a long time! An easy drive down Westminster Boulevard from Leisure World, Nah Binh is located in a small mall at the Magnolia Street intersection. There are twelve specialty items on the menu, spicy noodle soups with several cuts of pork and beef or shrimp, tapioca rice cakes and stuffed dumplings, and other delicacies, from the province of Thua Thien Hue, Vietnam. I went for #1, the beef soup was delicious. I felt so healthy afterwards and this family run restaurant will be one of my regular favorites for years to come. It is very spacious and perfectly sized, sparkling clean with wonderful nostalgic decor and paintings.   Love Will Win : The Seal Beach Pride Festival (June 10, 2023)   By Kathy Nadeau The Seal Beach Pride festival was organized to create a welcoming and inclusive celebration of the right of LGBTQ+ people to be themselves. Everyone had a good time. The music was excellent! Many colorfully adorned, sat, stood, and danced to the music on the grass next to the pier. It was peaceful and fun-loving, even as some far right bible thumpers called us sinners going to hell.  Kelley Robinson on  Democracy Now  (6/7/23) stated, “The Human Rights Campaign has declared a state of emergency for LGBTQ+ people in the United States, over a wave of discriminatory laws passed in states across the country.” Recently, Temecula Valley Unified District removed mention of Harvey Milk from its curriculum. He was our first openly gay elected politician (member of SF Board of Supervisors, 1977, until assassinated 11/27/78). He said, “you have to give them hope. Hope for a better world, hope...
